Back in February of 2015, I went to a health spa in Arizona that I visit annually. I chose to get some blood tests since then I was 40. The results were not fantastic. There were some red flags and that I had to start getting serious about weight reduction and my health.
In December of the same year, my spouse and brought our mountain bicycles and I went to a holiday to the Florida Keys. We went to start 2016 and eating right! But on the drive home to Michigan, I started looking up different approaches to eat correctly. I had stumbled upon some info that said potatoes are bad for you and, since I had 23 hours to kill, I decided to dip in and investigate this details. That’s how I discovered your site.
I had progressively looked to exactly what foods were good/bad and discovered that Paleo appeared the ideal route to get healthier. (I actually looked up “are potatoes paleo” and found that it had been an emphatic NO!) Potatoes were rather high on the glycemic index…and all this time I believed they were still healthy. I cubed in the morning or ate them as hash browns and had them mashed as a side dish with dinner. I felt like everything I had ever known was wrong! After we got home, we restocked them and totally cleaned out the cabinet and refrigerator. The results were instant. I then kept it off and dropped 30 pounds in about 8 months. Following the initial two weeks, the weight reduction was slower but still stable. I had a lot more energy and that I felt more healthy.
Just as an example, I will share what I changed for dinner and breakfast:
Breakfast: Wild berry smoothie using an egg and cheese sandwich from Panera (54g carbohydrates)
Lunch: veggie salad with croutons and spoonful out of Big Salad with tomato basil soup ( 78g carbohydrates)
Just those two meals alone and that I had been over 200 carbohydrates daily. I can not even envision what my dishes were once we’d meat, spaghetti and pizza and potatoes regularly. I still can not understand why the U.S. RDA states 300 carbohydrates is suggested.
I obtained my blood retested and went back in May of 2016 to the spa in Arizona. My doctor asked what I had changed and that I advised her that I went from being a vegetarian to paleo. She was advised by me for breakfast that I ate eggs and bacon with a cup of cashew milk. For lunch I had been having salads (hold the cranberries and croutons!) And. For dinner I had been having steak and steamed veggies and dessert was berry or any coconut milk “ice cream.” She seemed very worried. She wished to recheck my cholesterol. Below are a few of the red flag items. My physician was shocked and that I expected my results spoke for them.

I am not out of the woods yet. I still have quite a way and that I intend on getting a second blood test. I am grateful for your own knowledge and your site! I come back, although I’ve strayed a little a few times this past year and getting back on course becoming easier and easier. My husband (who did not have to drop weight being 6’6 and 180 pounds) also commented about how good he feels as a result of those modifications.
Our challenges are convenience foods, or rather lack of good grab and go foods. I am aware that I need to prepare for all those moments and I strive to but with cows this year, a garden and 3 teens and being busy on the job, it’s proving to be difficult. I need to reevaluate your site for a few good thoughts! Here are a couple of pictures for you. They are pretty close to “before and after” but as I mentioned, I still have a ways to go.
